A night at Costes is a night for people-watching, which is to say: for being watched. The courtyard at noon — olive trees, a single square of sky — is the reason to stay. The rooms remain theatrical in the way they have for twenty years; the service remains unhurried in a less flattering sense. Ordered the same thing three times before it arrived.
